Meal of the Day!: lunch
Crunchy Tuna Patties:
SERVINGS: 8
INGREDIENTS
4 3oz cans tuna, in water4 egg whites
16 Wheat Thins crackers, crushed
¼ cup grated carrot
¼ cup chopped water chestnuts, capers or diced red pepper
1 Tbsp minced onion, if tolerated
Pepper, dill and dried mustard, to taste

DIRECTIONS
- Mix all ingredients together.
- Form mixture into eight patties with hands.
- Spray medium skillet with nonstick cooking spray and place over medium heat.
- Cook patties until golden brown on both sides, 2-3 minutes per side.
