Chicken and vegetable soup

 Warm your soul and cozy up with this flavorful protein packed Chicken Soup! It's hearty with lots of veggies and chicken and each serving has 20g of protein.

Servings:4

Ingredients:

  • 2 large onions, roughly chopped
  • 1 celery stick, roughly chopped
  • 200g cauliflower, cut into small florets
  • 1 butternut squash pitted, cubed
  • 3 large garlic cloves, peeled
  • 1 fresh rosemary sprig
  • 1 bay leaf
  • liter boiling  low sodium chicken stock
  • 6 scoops of Bariatric Advantage High Protein Powder ( Chicken)
  • 1 large carrot, peeled and cut into small chunks
  • 150g broccoli, cut into small florets
  • 1 skinless and boneless chicken breast, cut into small chunks






Directions:


  1. Put everything except the BA Protein Powder, carrots, broccoli and chicken into a large saucepan and bring to the boil over a high heat. Reduce the heat to low, cover and simmer for 15 minutes or until the vegetables are tender.
  2. Remove the bay leaf and rosemary sprig and whizz until smooth using a stick blender (or use a food processor or liquidizer and return the soup to the pan).
  3. Add the carrot and simmer for 5 minutes, then add the broccoli and chicken and cook for another 5 minutes or until the chicken is cooked through and the vegetables are tender. 
  4. Let sit for 3-5 mins once cooled down slightly, mix in BA Protein Powder until there are no clumps. Season lightly and serve while still hot.
