MEAL OF THE DAY
Creamy white chicken chili
prep: 10 minutes
cook: 40 min
serves: 4 normal sized portions, more bariatric portions
1 large chicken breast, cut into 1/2 inch cubes
1 small onion chopped
1 and 1/2 teaspoons garlic powder (or three fresh garlic cloves minced)
1 tablespoon extra virgin olive oil
1 can great northern beans, rinsed and drained
1 cup chicken broth
1 can (4 oz) chopped green chilies
1 teaspoon salt
1/2 teaspoon ground cumin
1.2 teaspoon dried oregano 1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 cup heavy whipping cream
shredded cheddar cheese to top chili
sliced seeded jalapeƱo pepper to top chili
Directions:
1. In a large saucepan, saute the chicken, onion, and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chilies, and seasonings. Bring to a boil, Reduce heat; simmer, uncovered, for 30 minutes.
2. Remove from the heat; stir in cream. If desired, top with cheese and jalapeƱos.
